HEALTHY BANANA MUFFINS :


Healthy recipes that make for the perfect quick breakfast - and they're delicious?  Yes please.  If you're a banana person, this banana muffin recipe we found is for YOU!  No flour, oil or butter and you can't even tell.  Make a huge batch in advance from bananas you've frozen or ones that are sitting on your kitchen counter and have juuuust turned the perfect shade of brown.  Freeze a bag and pull one out any time you need a quick breakfast or snack.  Sweeten with a bit of agave nectar or honey if you're feeling especially sinful.  We recommend eating them warm, or warming just slightly before eating.  That's when they're most delicious.  Yum!

2.5 cups old fashioned oats
1 cup plain low fat greek yogurt
2 eggs
3/4 cup sugar (or sweetener of choice)
1.5 tsp baking powder
1/2 tsp baking soda
2 ripe bananas

1. Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with silicone or foil liners.
2. Place all of the ingredients, including bananas, in a blender or food processor, and blend
until oats are smooth.   We recommend adding the oats a cup at a time and blending in between.
3. Divide batter among cupcake liners, and bake for 15-20 minutes, or until toothpick comes out clean.

4. Enjoy & try not to eat them all at once! 
 
Note!  Be sure to watch them closely in the oven, because depending on altitude, baking time may be a little less.
