A QUICK + EASY BREAKFAST OR SNACK RECIPE?


These easy to prep energy balls are a delicious anytime snack, and a great treat to grab for breakfast as you're running out the door in the morning.  We've taken a recipe found online and have enhanced it a bit - what my husband refers to as 'a la Paige'!  My son, 8 year old Gabe, made this batch from start to finish. We doubled the recipe so when I was training a client this morning, a healthy breakfast was already served, and there was plenty to share...

2 Scoops Vanilla Pro Fit Protein Powder
1 Cup Oatmeal
1/2 Cup Peanut Butter
1 Cup Coconut Flakes
1/3 Cup Honey
1/2 Cup Flaxseed
1/8 Cup Coconut Oil 

Because we only use natural peanut butter (never put anything in your body that has hydrogenated oils!) this and other similar recipes are always a little dry. Adding more honey makes them way to sweet. So we add just enough coconut oil to provide the moisture needed to form the balls.  This adds measurable nutrition to the treats - as you need coconut oil daily!
