BLACKENED SALMON :

- Fresh Salmon
- Cajun Seasoning
- 2 tbsp. Vegetable Oil

- Cut salmon into 1/2 inch strips.
- Spread 1/2 cup of seasoning on a large plate or shallow dish.
- Thoroughly coat salmon in cajun seasoning.
- Warm 2 tbsp. oil in a non-stick frying pan.  
- Cook on both sides until done, about 2 minutes per side.

Serving Suggestions:
- Serve salmon on top of chopped romaine and sprinkle with shredded parmesan cheese.  Drizzle caesar salad dressing on top.
- Serve salmon on a bed of fresh baby spinach.  Add slices of hard-boiled egg, thinly sliced red onion and sliced black olives.  Sprinkle with parmesan cheese and your favorite dressing.
